I made this last night; it is very warming and calming.You will need:
Favourite vegetable broth. (I use powder, about 1 1/2-2 tablespoons for a pot of water)
1 tablespoon soy sauce
1 package rice or udon noodles
1 package tufo (I deep fried mine in pieces, like traditional pho, in oil for 5-7 minutes in a pan on medium high heat. You can buy pre-fried tofu at an asian market if you prefer or cook tofu in oil in a saucepan until golden brown.)
1 bunch of green onions, chopped
salt, pepper
mixed of pre-cooked (steam beforehand) or frozen vegetables such as broccoli, cauliflower, carrots cut large so you can use chop sticks!
Optional:
1 package mung bean sprouts
basil (for added flavour and to garnish)
Cook tofu, add to large pot of water and add in the other ingredients, except noodles. Turn on to medium heat. In a small pot, boil water and cook noodles according to package directions. I used udon noodles which take about 4 minutes. Then, add them to your large pot. Heat thoroughly and serve with mung bean sprouts and basil garnish!
